Of course, white rice adds a touch of style to the finished product. <\/h2>\n<\/p>\n<div>\n<p>30-45 min<gwmw style=\"display:none;\"\/><gwmw style=\"display:none;\"\/><\/p>\n<p>4 people<\/p>\n<p>Prep 20 minutes<\/p>\n<p>Difficulty: Easy<br \/>\u00a0<\/p>\n<p><strong>ALSO READ: Recipe of the day: Director\u2019s martini<\/strong><\/p>\n<h2 class=\"wp-block-heading\" id=\"h-ingredients\">Ingredients<\/h2>\n<p>1 cup brown rice, rinsed<br \/>2 cups vegetable stock<br \/>1 medium butternut<br \/>2 Tbsp olive oil<br \/>Salt<br \/>1 Tbsp cumin seeds<br \/>1 tsp ground coriander<\/p>\n<p><strong>For the dressing<br \/><\/strong>4 Tbsp honey<br \/>3 Tbsp red wine vinegar \/ balsamic vinegar<br \/>4 Tbsp orange juice<br \/>\u00bd tsp orange zest<br \/>3 Tbsp wholegrain mustard<br \/>3 Tbsp olive oil<br \/>1 x 400g can bean mix, drained and patted dry<br \/>\u00bd red onion, finely chopped<br \/>100g sliced biltong<br \/>150g feta cheese, crumbled<br \/>Small handful fresh mint leaves<\/p>\n<h2 class=\"wp-block-heading\" id=\"h-method\">Method<br \/><\/h2>\n<p>Preheat the oven to 200\u00b0C and line a baking tray with paper.<\/p>\n<p>Put the rice and stock into a pot. Bring to a boil, then turn down the heat and simmer for about 25 minutes, or until cooked. Drain off excess liquid. <\/p>\n<p>Allow it to sit for a few minutes before putting the salad together.<\/p>\n<p>Peel and cube the butternut, discarding the peels and seeds. Place the cubes on the baking sheet and drizzle over 2 tablespoons of olive oil, a pinch of salt, the cumin seeds, and ground coriander. Toss well and roast in the oven for 30-40 minutes, until cooked and the edges are caramelised. <\/p>\n<p>Give the butternut a toss halfway through cooking.\u00a0<gwmw style=\"display: none; background-color: transparent;\"\/><gwmw style=\"display:none;\"\/><\/p>\n<p>To make the dressing, simply whisk the ingredients together.\u00a0<\/p>\n<p>Mix the rice and beans and stir through \u00be of the dressing.\u00a0<gwmw style=\"display:none;\"\/><\/p>\n<p>Carefully mix through the butternut, onion and most of the biltong and feta cheese.<gwmw style=\"display:none;\"\/><\/p>\n<p>Spread this over a platter.
